You first must diagnose WHAT and WHY it is dying ... know it's what your asking, but we are not there and you are.

When it dies, Is plug wet and engine flooded ?
Does engine get water in it from the cooling system of exhaust couplers causing it to die ?
Is engine idling once on water or dies upon acceleration ? If dies upon placing in water betcha water leaking in at exhaust as pump primes cooling system .... dies upon acceleration, carb setting too lean on low end.

Yeah, sounds like it getting in from the exhaust. Remove the cooling from the exhaust, just let the water go overboard to test. Take it from there. You might be injecting way too far up in the header? Hard to tell without more details, as Scott has already pointed out.
